Ingredients
- CAKE
- 1/2 cup butter
- 1/2 cup sugar
- 3 eggs
- 1 cup flour
- 2 tsp baking powder
- 1/2 cup milk
- 1 teaspoon vanilla
- TOPPING
- 3 egg whites
- 1/2 cup sugar
- 1/2 cup coconut
Instructions
- Preheat oven to 350 degrees F.
For the base
- Cream together butter and sugar well
- Add egg yolks one at a time, mixing well after each
- In a separate bowl, mix flour and baking powder.
- In a measuring cup mix milk and vanilla.
- Add dry ingredients to creamed mixture alternating with the milk & vanilla mixture.
- Spread into a well greased 8 x 8 pan.
For the topping
- Beat egg whites with sugar until stiff.
- Fold in half a cup of coconut.
- Spread over first mixture and bake at 350 degrees for 30-35 minutes.
