Macaroon Cake

Ingredients
  1. CAKE
  2. 1/2 cup butter
  3. 1/2 cup sugar
  4. 3 eggs
  5. 1 cup flour
  6. 2 tsp baking powder
  7. 1/2 cup milk
  8. 1 teaspoon vanilla
  9. TOPPING
  10. 3 egg whites
  11. 1/2 cup sugar
  12. 1/2 cup coconut
Instructions
  1. Preheat oven to 350 degrees F.
For the base
  1. Cream together butter and sugar well
  2. Add egg yolks one at a time, mixing well after each
  3. In a separate bowl, mix flour and baking powder.
  4. In a measuring cup mix milk and vanilla.
  5. Add dry ingredients to creamed mixture alternating with the milk & vanilla mixture.
  6. Spread into a well greased 8 x 8 pan.
For the topping
  1. Beat egg whites with sugar until stiff.
  2. Fold in half a cup of coconut.
  3. Spread over first mixture and bake at 350 degrees for 30-35 minutes.
