Ingredients
- 3lbs potatoes
- 1 cup chicken broth
- 2 Tbsp fresh lemon juice
- 1/4 cup butter, melted
- 1 tsp oregano
- 1 tbsp fresh garlic, minced
- salt & pepper
- 1/2-3/4 cup grated parmesan
Instructions
- 1. Preheat the oven to 375 degrees.
- 2. Butter a shallow baking dish.
- 3. Peel and cut potatoes into large wedges and place into prepared baking dish.
- 4. In a bowl, combine broth, lemon juice, butter, oregano and stir and coat.
- 5. Cover dish tightly with foil.
- 6. Bake for 40 min.
- 7. Uncover and turn potatoes.
- 8. Sprinkle with cheese and return to oven uncovered.
- 9. Bake for 20-30 minutes.
