Roasted Brussels Sprouts with Bacon, Pine Nuts & Maple Syrup

Ingredients
  1. 1/2 cup pine nuts (candied)
  2. 6 bacon slices
  3. 2 pounds brussels sprouts, halved (stem and ragged outer leaves removed)
  4. 3 tablespoons extract virgin olive oil
  5. 1 teaspoon salt
  6. 1/2 teaspoon freshly ground black pepper
  7. 2 1/2 tablespoons balsamic vinegar
  8. 1 tablespoon maple syrup
Instructions
  1. Preheat oven to 350 degrees. Line a baking sheet with aluminum foil.
  2. Prepare candied pine nuts using simple syrup method. Place pine nuts on the prepared baking sheet and bake until lightly toasted. Transfer to a dish and set aside.
  3. Turn the oven heat up to 400 degrees. Lay the bacon strips on the same prepared baking sheet and roast for 12-20 minutes until the bacon is crisp. Place bacon on a plate lined with paper towels and reserve the bacon fat. When bacon is cool, finely chop and set aside.
  4. Turn the oven heat up to 425 degrees and line the baking sheet with a clean piece of aluminum foil. Using a rubber spatula, toss the Brussels sprouts with the reserved bacon fat, olive oil, salt and pepper directly on the baking sheet. Roast until sprouts are tender and carmalized, about 20 minutes, stirring midway.
  5. Add balsamic vinegar and maple syrup and toss to coat evenly. Taste and adjust season to tast then transfer to a serving dish. Top with chopped bacon and candied pine nuts.
