Apricot-Almond Wild Rice Stuffing

Ingredients
  1. 1 medium onion, finely chopped
  2. 1/4 cup bacon fat
  3. 3 cups cooked wild rice (Uncle Bens)
  4. 1 cup almonds, chopped
  5. 1 cup dried apricots, chopped
  6. 2 tablespoons brandy (optional)
Instructions
  1. Sauté onion in bacon fat until tender. Combine onion, bacon fat, cooked wild rice, almonds, dried apricots and brandy (if using). Toss together lightly.
  2. Lightly stuff bird of choice or alternatively this may be baked in a separate dish at 350 degrees F for about 45 minutes or until apricots are tender and served as a side dish. Add water if necessary to avoid drying out.
