Vegetable Casserole

A good dish for a holiday gathering.

Ingredients
- 2 cups fresh broccoli
- 2 cups fresh cauliflower
- 2 eggs
- 1/2 cup mayonnaise
- 1 medium onion finely diced
- 1 can cream of mushroom soup
- 1 cup sharp cheddar cheese
- 1/2 cup butter melted (optional)
- 6 ounces or 120 farm package of seasoned croutons, crushed
Instructions
- Preheat oven to 350 degrees
- Cook/blanch vegetables separately, drain well and put into an ice bath to stop cooking
- Allow vegetables to cool completely, then distribute in a buttered Casserole dish
- Beat eggs in a large bowl and combine with mayonnaise, onion, mushroom soup ans 1/2 cup of the cheese
- Pour egg mixture over top of the vegetables
- Sprinkle remaining cheese over top, level with a spoon
- If using butter, pour the melted butter over top
- Evenly distribute the crushed croutons over top and prepare for baking
- Bake in 350 degree oven, uncovered for 40 minutes
