Vegetable Casserole

A good dish for a holiday gathering.

Ingredients
  1. 2 cups fresh broccoli
  2. 2 cups fresh cauliflower
  3. 2 eggs
  4. 1/2 cup mayonnaise
  5. 1 medium onion finely diced
  6. 1 can cream of mushroom soup
  7. 1 cup sharp cheddar cheese
  8. 1/2 cup butter melted (optional)
  9. 6 ounces or 120 farm package of seasoned croutons, crushed
Instructions
  1. Preheat oven to 350 degrees
  2. Cook/blanch vegetables separately, drain well and put into an ice bath to stop cooking
  3. Allow vegetables to cool completely, then distribute in a buttered Casserole dish
  4. Beat eggs in a large bowl and combine with mayonnaise, onion, mushroom soup ans 1/2 cup of the cheese
  5. Pour egg mixture over top of the vegetables
  6. Sprinkle remaining cheese over top, level with a spoon
  7. If using butter, pour the melted butter over top
  8. Evenly distribute the crushed croutons over top and prepare for baking
  9. Bake in 350 degree oven, uncovered for 40 minutes
