Ingredients
- 2 leeks, thinly sliced
- 1 small onion, finely diced
- 1 cup ham, diced
- dash of sage (dried)
- dash of nutmeg (freshly ground)
- 1 bottle of dark beer or ale
- 1 1/2 lbs Yukon Gold potatoes
- 1/2 lb mini red potatoes
- 1/4 lb sweet potato, peeled
Instructions
- In a large pot saute the leeks, onion and diced ham until onion and leeks are just becoming translucent. Gently mix in sage and nutmeg.
- Deglaze pan with bottle of beer/ale.
- Add all the potatoes and add enough water to cover all of the ingredients. Cook for one hour.
- Working in batches, puree in a blender until smooth.
- Return to the pot and season with salt & pepper and a splash of balsamic vinegar.
