Twisted Fork Potato Soup

Ingredients
  1. 2 leeks, thinly sliced
  2. 1 small onion, finely diced
  3. 1 cup ham, diced
  4. dash of sage (dried)
  5. dash of nutmeg (freshly ground)
  6. 1 bottle of dark beer or ale
  7. 1 1/2 lbs Yukon Gold potatoes
  8. 1/2 lb mini red potatoes
  9. 1/4 lb sweet potato, peeled
Instructions
  1. In a large pot saute the leeks, onion and diced ham until onion and leeks are just becoming translucent. Gently mix in sage and nutmeg.
  2. Deglaze pan with bottle of beer/ale.
  3. Add all the potatoes and add enough water to cover all of the ingredients. Cook for one hour.
  4. Working in batches, puree in a blender until smooth.
  5. Return to the pot and season with salt & pepper and a splash of balsamic vinegar.
