Stuffed Eggplant

Ingredients
- 4-6 medium eggplants
- 1 pound ground pork
- basil, crushed chilies, oregano, garlic, salt and pepper
- 1 egg
- Parmesan cheesc
- Mozzarella cheese
Instructions
- Preheat oven to 325 degrees Fahrenheit. Bring a large pot of water to boil.
- Clean eggplants and cut in half lengthwise. Scoop out majority of flesh.
- Place eggplants into boiling water with 1 teaspoon of salt and boil for 3 minutes. Remove from water and separate seeds from flesh.
- Season ground meat as you would for meatballs (less bread).
- Fill eggplants with ground meat mixture. Cover with sauce.
- Bake covered for 30 minutes. Remove cover, top with mozzarella cheeze and return to oven, and cook uncovered for another 10-15 minutes.
