Stuffed Eggplant

Ingredients
  1. 4-6 medium eggplants
  2. 1 pound ground pork
  3. basil, crushed chilies, oregano, garlic, salt and pepper
  4. 1 egg
  5. Parmesan cheesc
  6. Mozzarella cheese
Instructions
  1. Preheat oven to 325 degrees Fahrenheit. Bring a large pot of water to boil.
  2. Clean eggplants and cut in half lengthwise. Scoop out majority of flesh.
  3. Place eggplants into boiling water with 1 teaspoon of salt and boil for 3 minutes. Remove from water and separate seeds from flesh.
  4. Season ground meat as you would for meatballs (less bread).
  5. Fill eggplants with ground meat mixture. Cover with sauce.
  6. Bake covered for 30 minutes. Remove cover, top with mozzarella cheeze and return to oven, and cook uncovered for another 10-15 minutes.
