Polenta

Ingredients
  1. POLENTA
  2. 2 servings instant potatoes (see below)
  3. 8 cups cold water
  4. 2 cups corn meal
  5. 1 tbsp salt
  6. MEAT SAUCE
  7. 1 pound ground beef
  8. 1 pound hot Italian sausage
  9. 1 small onion chopped
  10. 2 cloves garlic minced
  11. 2-28 ounce cans of tomatoes
  12. 3 tbsp tomato paste
  13. Mushrooms
  14. Asparagus
  15. INSTANT POTATOES (2 servings)
  16. 2/3 cup water
  17. 1/4 tsp salt
  18. 1/4 cup milk
  19. 2/3 cup potato flakes
  20. INSTANT POTATOES (4 servings)
  21. 1 1/2 cups water
  22. 1/2 tsp salt
  23. 1/2 cup milk
  24. 1 1/2 cups potato flakes
Meat Sauce
  1. 1 lb ground beef
  2. 1 lb hot sausage meat
  3. 1 small onion
  4. 2 cloves garlic
  5. 2 28 ounce cans of tomatoes
  6. 1 tin of tomato paste
  7. mushrooms
  8. asparagus
Instructions
  1. Make meat sauce as normally would.
  2. Make the instant potatoes by bringing the water and salt to a boil, remove from heat and add the milk, salt and potato flakes.
  3. After the potatoes have finished, pour in 8 cups of cold water and add 2 cups of corn meal immediately with 1 Tbsp of salt.
  4. Stir continuously, until mixture beings to thicken.
  5. Once it begins to bubble, turn down the heat to a simmer continue to cook the mixture for approximately 45 minutes, stirring frequently and adding more water as necessary if mixture becomes too thick.
  6. Polenta will be ready when it is a smooth, non-grainy and gritless mixture.
  7. Pour onto board and cover with meat sauce.
