Ingredients
- POLENTA
- 2 servings instant potatoes (see below)
- 8 cups cold water
- 2 cups corn meal
- 1 tbsp salt
- MEAT SAUCE
- 1 pound ground beef
- 1 pound hot Italian sausage
- 1 small onion chopped
- 2 cloves garlic minced
- 2-28 ounce cans of tomatoes
- 3 tbsp tomato paste
- Mushrooms
- Asparagus
- INSTANT POTATOES (2 servings)
- 2/3 cup water
- 1/4 tsp salt
- 1/4 cup milk
- 2/3 cup potato flakes
- INSTANT POTATOES (4 servings)
- 1 1/2 cups water
- 1/2 tsp salt
- 1/2 cup milk
- 1 1/2 cups potato flakes
Meat Sauce
- 1 lb ground beef
- 1 lb hot sausage meat
- 1 small onion
- 2 cloves garlic
- 2 28 ounce cans of tomatoes
- 1 tin of tomato paste
- mushrooms
- asparagus
Instructions
- Make meat sauce as normally would.
- Make the instant potatoes by bringing the water and salt to a boil, remove from heat and add the milk, salt and potato flakes.
- After the potatoes have finished, pour in 8 cups of cold water and add 2 cups of corn meal immediately with 1 Tbsp of salt.
- Stir continuously, until mixture beings to thicken.
- Once it begins to bubble, turn down the heat to a simmer continue to cook the mixture for approximately 45 minutes, stirring frequently and adding more water as necessary if mixture becomes too thick.
- Polenta will be ready when it is a smooth, non-grainy and gritless mixture.
- Pour onto board and cover with meat sauce.
