Ingredients

Day 1
- - wash and dry tomatoes
- - cut vertically(not horizontally) 1/4 inch thick slices
- - sprinkle generously with course salt
- - place in large pot with a weight on top
Day 3
- - drain and squeeze very well( or place in a strainer with weight on top for an hour)
- - when drained- add oil, oregano, garlic, fresh sliced hot peppers and mix well
- - let stand for eight hours, mixing occasionally.
- - fill jars using a wooden spoon to force down so they are packed tightly
- - top jars with oil and seal jars
Notes
- STORE IN A COOL PLACE!
- Can be eaten in about four to six weeks.
