Ingredients
  1. *****
Day 1
  1. - wash and dry tomatoes
  2. - cut vertically(not horizontally) 1/4 inch thick slices
  3. - sprinkle generously with course salt
  4. - place in large pot with a weight on top
Day 3
  1. - drain and squeeze very well( or place in a strainer with weight on top for an hour)
  2. - when drained- add oil, oregano, garlic, fresh sliced hot peppers and mix well
  3. - let stand for eight hours, mixing occasionally.
  4. - fill jars using a wooden spoon to force down so they are packed tightly
  5. - top jars with oil and seal jars
Notes
  1. STORE IN A COOL PLACE!
  2. Can be eaten in about four to six weeks.
