Julia Child's New York Style Cheese Cake (Base)

Crust
  1. 1 1/2 cup graham cracker crumbs or cookie crumbs
  2. 3/4 cup sugar
  3. 1/3 cup melted butter
Cheese Cake Base
  1. 1 1/2 lbs cream cheese, room temp.
  2. 3/4 cup sugar
  3. 1/4 cup flour
  4. 3 eggs, room temp
  5. 1 tsp. vanilla
  6. 1/2 cup sour cream
Instructions
  1. 1. Using a 10 inch spring form a pan line the sides and bottom of the pan.
  2. 2. Preheat the oven to 350 degrees.
  3. 3. Mix, cookie crumbs, sugar and butter press into the bottom of the pan.
  4. 4. In a kitchen aid mixer add room temperature cream cheese and cream for 5 minutes. After the 5 minutes add the sugar and cream again for another 5 minutes.
  5. 5. Scrape the bowl and add the flour and vanilla.
  6. 6.Then add one egg at a time making sure to scrape the sides of a bowl. After all eggs are thoroughly mixed add in the sour cream stir until incorporated.
  7. 7. Mix in your flavourings as desired.
  8. 8. Pour the batter into the pan.
  9. 9. Bake for 50 - 60 minutes. Remove from oven and let come to room temperature.
  10. 10. Refrigerate for 3 hours before serving.
