Carrot Cake

Ingredients
  1. 1 1/2 cups oil
  2. 2 cups sugar
  3. 4 eggs
  4. 2 cups flour
  5. 1/2 tsp baking powder
  6. 2 tsp baking soda
  7. 1/2 tsp salt
  8. 1 cup chopped walnuts (optional)
  9. 1 14 oz. can of crushed pineapple(drained)
  10. 2 cups grated carrot
Icing
  1. 4 oz cream cheese
  2. 1 cup icing sugar
  3. 2 tsp vanilla
  4. 1/4 cup butter
Instructions
  1. Mix oil and sugar, add well beaten eggs and blend( do not over mix). Sift dry ingredients together and add to the first mixture. Add nuts, pineapple, and carrots.
  2. Bake in a 350 degree oven in a tube pan or 13 x 9 1/2" pan. Check cake at forty-five minutes.
Icing
  1. 1. Mix all ingredients together thoroughly. Frost cake when it has completely cooled.
