Carrot Cake

Ingredients
- 1 1/2 cups oil
- 2 cups sugar
- 4 eggs
- 2 cups flour
- 1/2 tsp baking powder
- 2 tsp baking soda
- 1/2 tsp salt
- 1 cup chopped walnuts (optional)
- 1 14 oz. can of crushed pineapple(drained)
- 2 cups grated carrot
Icing
- 4 oz cream cheese
- 1 cup icing sugar
- 2 tsp vanilla
- 1/4 cup butter
Instructions
- Mix oil and sugar, add well beaten eggs and blend( do not over mix). Sift dry ingredients together and add to the first mixture. Add nuts, pineapple, and carrots.
- Bake in a 350 degree oven in a tube pan or 13 x 9 1/2" pan. Check cake at forty-five minutes.
Icing
- 1. Mix all ingredients together thoroughly. Frost cake when it has completely cooled.
