Caprese Skewers

Reduction
  1. 1 cup balsamic vinegar
  2. 1 Tbsp dijon mustard
  3. 1 clove garlic
  4. 1/2 tsp salt
  5. 1/4 tsp ground pepper
  6. 1/3 cup extra virgin olive oil
Skewers
  1. 24 mini boccocini
  2. 1 pint grape tomatoes
  3. 2 bunches basil
  4. 24 bamboo skewers ( 6 inch)
Instructions
  1. 1. In a saucepan, over medium heat bring balsamic vinegar to a boil. Reduce heat and simmer for 10-15 minutes, or until reduced to 1/2 cup. It will thicken as it cools.
  2. 2. In a bowl, wisk together reduced vinegar, mustard garlic, salt and pepper. Slowly drizzle in oil, whisking to combine.
  3. 3. Trim basil leaf if necessary, and wrap each boccocini. Skewer wrapped cheese and one grape tomato.
