Caprese Skewers

Reduction
- 1 cup balsamic vinegar
- 1 Tbsp dijon mustard
- 1 clove garlic
- 1/2 tsp salt
- 1/4 tsp ground pepper
- 1/3 cup extra virgin olive oil
Skewers
- 24 mini boccocini
- 1 pint grape tomatoes
- 2 bunches basil
- 24 bamboo skewers ( 6 inch)
Instructions
- 1. In a saucepan, over medium heat bring balsamic vinegar to a boil. Reduce heat and simmer for 10-15 minutes, or until reduced to 1/2 cup. It will thicken as it cools.
- 2. In a bowl, wisk together reduced vinegar, mustard garlic, salt and pepper. Slowly drizzle in oil, whisking to combine.
- 3. Trim basil leaf if necessary, and wrap each boccocini. Skewer wrapped cheese and one grape tomato.
