Bow Tie Chicken Pasta

Ingredients
- 1/2 (450 g) pkg bow tie pasta
- 1 Tbsp olive oil
- 2 Boneless skinless chicken breasts, cut into 1 inch pieces
- 1-2 carrots, thinly sliced
- 1/2 cup chicken stock
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/4 tsp salt
- 1/2 tsp black pepper
- 2 cloves of garlic, minced
- 1 tsp lemon zest
- 2 Tbsp finely chopped parsley
- 1/4 cup Parmesan cheese
Instructions
- 1. Bring a large pot of water to a boil. Add approximately 1 tbsp salt to water, add pasta, cook.
- 2. Meanwhile, heat oil in large skillet/ frying pan over medium/high heat. Add diced chicken and cook for 3 minutes or until no loner pink. Add broth, carrots, basil, oregano, salt and pepper. Increase heat if necessary, to bring to simmer. Add garlic. Cook uncovered for 2 minutes or until carrots or tender.
- 3. Once pasta is cooked, drain. Immediately toss with chicken mixture, lemon, and parsley. Add cheese just before serving.
