Bow Tie Chicken Pasta

Ingredients
  1. 1/2 (450 g) pkg bow tie pasta
  2. 1 Tbsp olive oil
  3. 2 Boneless skinless chicken breasts, cut into 1 inch pieces
  4. 1-2 carrots, thinly sliced
  5. 1/2 cup chicken stock
  6. 1 tsp dried basil
  7. 1 tsp dried oregano
  8. 1/4 tsp salt
  9. 1/2 tsp black pepper
  10. 2 cloves of garlic, minced
  11. 1 tsp lemon zest
  12. 2 Tbsp finely chopped parsley
  13. 1/4 cup Parmesan cheese
Instructions
  1. 1. Bring a large pot of water to a boil. Add approximately 1 tbsp salt to water, add pasta, cook.
  2. 2. Meanwhile, heat oil in large skillet/ frying pan over medium/high heat. Add diced chicken and cook for 3 minutes or until no loner pink. Add broth, carrots, basil, oregano, salt and pepper. Increase heat if necessary, to bring to simmer. Add garlic. Cook uncovered for 2 minutes or until carrots or tender.
  3. 3. Once pasta is cooked, drain. Immediately toss with chicken mixture, lemon, and parsley. Add cheese just before serving.
