Apricot-Almond Wild Rice Stuffing

Ingredients
- 1 medium onion, finely chopped
- 1/4 cup bacon fat
- 3 cups cooked wild rice (Uncle Bens)
- 1 cup almonds, chopped
- 1 cup dried apricots, chopped
- 2 tablespoons brandy (optional)
Instructions
- Sauté onion in bacon fat until tender. Combine onion, bacon fat, cooked wild rice, almonds, dried apricots and brandy (if using). Toss together lightly.
- Lightly stuff bird of choice or alternatively this may be baked in a separate dish at 350 degrees F for about 45 minutes or until apricots are tender and served as a side dish. Add water if necessary to avoid drying out.
