Cottage Meatloaf

Ingredients
- Meat Loaf
- 1 1/2 pounds lean ground beef
- 1/2 cup ketchup
- 1/3 cup tomato juice
- 1/2 tsp each salt and pepper
- 1/8 tsp crushed red chilies
- 2 eggs, beaten
- 3/4 breadcrumbs
- 1/4 cup onion, finely chopped
- 2 tsp prepared mustard
- Topping
- 1/4 cup ketchup
- 1/2 tsp prepared mustard
- 2 tsp brown sugar
Instructions
- In a large bowl, combine ketchup, tomato juice, salt, black and red peppers, eggs, bread crumbs, onions and mustard. Mix until thoroughly blended.
- Add ground beef. Mix gently but not thoroughly.
- In microsafe baking dish, form meat mixture into a 9-inch ring. Cover with waxed paper.
- Microwave on HIGH power for 5 minutes. Pour off any dishes.
- Microwave, covered, at medium power for about 10 minutes.
- Remove waxed paper. Spread top of meat loaf with topping mixture.
- Microwave, uncovered, at HIGH power for about 5 minutes longer or until meat loaf is done.
