Braised Chicken with Salami and Olives

Ingredients
  1. 4 pounds chicken (bone-in, skin on breasts or an assortment of legs and/or thighs)
  2. 2 teaspoons Kosher salt
  3. 3/4 teaspoon black pepper
  4. 3 tablespoons olive oil
  5. 1 medium onion, thinly sliced
  6. 5 garlic cloves, thinly sliced
  7. 1/2 fennel bulb, thinly sliced
  8. 1 rosemary branch (about 8 inches)
  9. 1 1/4 cups diced salami
  10. 1 cup pitted green olives, rinsed and cut in half
  11. 1 teaspoon dried oregano
  12. 1/2 teaspoon red pepper flakes
  13. 1/2 cup dry white wine
  14. 2 tablespoons tomato paste
  15. 2 tablespoons all-purpose flour
  16. 2 1/4 cups chicken broth
  17. 4 dried bay leaves
  18. Juice of 1 lemon
Instructions
  1. Heat the oven to 375 degrees Fahrenheit. Season the chicken all ove with salt and pepper.
  2. Heat the olive oil in a large skillet over medium heat and sear the chicken in 2 batches until golden brown (about 7 minutes per side).
  3. Transfer the cooked chicken to a 9x13" baking dish or another large, shallow casserole.
  4. Add the onions to the skillet and cook in the rendered chicken fat until brown, stirring, about 4 minutes.
  5. Add the garlic, fennel, rosemary branch,salami, olives, oregano, and red pepper flakes. Pour in the wine and simmer to reduce, scraping the bottom of the pan.
  6. Stir in the tomato paste and cook for 5 minutes, until caramelized.
  7. Add flour and cook, stirring to incorporate for another 2 minutes.
  8. Pour in the chicken broth in batches and stir to incorporate. Bring to a simmer over medium heat and cook until slightly thickened, 2 to 3 minutes.
  9. Gently stir in the bay leaves.
  10. Combine the chicken and the sauce in an oven-proof dish/pan and place into the oven to bake for 2 hours.
