Curried Chicken with Squash and Apples

Ingredients
  1. 1 1/2 cups roughly chopped onions
  2. 1 (28 oz. tin) diced or crushed tomatoes
  3. 1/2 cup Greek yoghurt (can be low or fat-free)
  4. 3 garlic cloves, sliced
  5. 1/2 inch fresh ginger, peeled and sliced
  6. 1 hot chili pepper (optional)
  7. 2 tbsp vegetable oil
  8. 1 tsp ground coriander
  9. 1 tsp ground cumin
  10. 1/2 tsp ground turmeric
  11. 1/4 tsp ground black pepper
  12. 1/4 tsp ground cinnamon
  13. 12 boneless, skinless chicken thighs
  14. 2 cups butternut squash, peeled and diced
  15. 1 cup apples, peeled and diced
  16. 1 tbsp lime juice
  17. salt
  18. 1/3 cup whole cashews, roasted and unsalted
  19. 2 tbsp fresh coriander leaves, chopped
  20. cooked basmati rice, for serving
Instructions
  1. 1.In a food processor or using an immersion blender, purée the onion, tomatoes, yogurt, garlic, ginger, and chili until smooth.
  2. 2.Heat the oil in a large skillet over medium-high heat. Add the spices and cook for 30 seconds, then add tomato liquid and bring up to a simmer. Reduce the heat to medium and stir in the chicken, squash, and apples. Add water, if needed, to cover the chicken and squash. Simmer, loosely covered, until the chicken is fully cooked, about 15 minutes. Add the lime juice and season to taste. Serve topped with cashews and coriander over basmati rice.
