Curried Chicken with Squash and Apples

Ingredients
- 1 1/2 cups roughly chopped onions
- 1 (28 oz. tin) diced or crushed tomatoes
- 1/2 cup Greek yoghurt (can be low or fat-free)
- 3 garlic cloves, sliced
- 1/2 inch fresh ginger, peeled and sliced
- 1 hot chili pepper (optional)
- 2 tbsp vegetable oil
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/4 tsp ground black pepper
- 1/4 tsp ground cinnamon
- 12 boneless, skinless chicken thighs
- 2 cups butternut squash, peeled and diced
- 1 cup apples, peeled and diced
- 1 tbsp lime juice
- salt
- 1/3 cup whole cashews, roasted and unsalted
- 2 tbsp fresh coriander leaves, chopped
- cooked basmati rice, for serving
Instructions
- 1.In a food processor or using an immersion blender, purée the onion, tomatoes, yogurt, garlic, ginger, and chili until smooth.
- 2.Heat the oil in a large skillet over medium-high heat. Add the spices and cook for 30 seconds, then add tomato liquid and bring up to a simmer. Reduce the heat to medium and stir in the chicken, squash, and apples. Add water, if needed, to cover the chicken and squash. Simmer, loosely covered, until the chicken is fully cooked, about 15 minutes. Add the lime juice and season to taste. Serve topped with cashews and coriander over basmati rice.
