A fabulous pick-up dinner through the week or lunch by the pool Saturday afternoon.

Ingredients
- 2 cups bread flour (or all-purpose)
- 1 tsp salt
- 1 1/2 tsp baking powder
- 1/3 cup lard
- 1/4 cup yogurt
- 1/4 cup water
Instructions
- Add first three ingredients to bowl of food processor and pulse to mix.
- Add lard to processor and pulse for 10 seconds.
- Whisk together yogurt and water in a measuring cup and slowly add to food processor whilst it is running.
- Continuing running until dough forms a nice ball. You may need to add up to 1/4 cup more water.
- Turn out onto board/counter and keep slightly into a ball. Cut ball into 4 equal portions and roll each portion into a nice round ball using a cupped hand.
- Cover with a tea towel and let sit for 15 minutes.
- Preheat a cast iron skillet on medium-high heat for approximately 6 minutes. During this time roll out the doughs into 10" circles and dot the dough.
- Place dotted dough into skillet and cook first side for approximately 1 1/2- 2 minutes (should begin to smell like toast). Flip over and cook the second side for another 1-2 minutes.
- Top with your favourite toppings, fold over and eat like a street sandwich.
