Panzanella

Ingredients
  1. 5 medium ripe tomatoes, cored and cut into cubes
  2. 5 cups day old Italian bread, cut into 1 inch cubes
  3. 1/2 English cucumber, halved and sliced thin
  4. 1/2 red or Vidalia onion thinly sliced
  5. 1/2 cup fresh basil leaves lightly packed, chiffonade
  6. 2 tablespoons capers, rinsed
  7. 1/3 cup extra virgin olive oil
  8. 1/4 cup red wine vinegar or balsamic vinegar
  9. 1 clove garlic minced
  10. Salt and pepper to taste
Instructions
  1. In large serving bowl, combine tomato, bread, cucumber, onion, basil and capers.
  2. For the dresssing, in a small bowl, whisk together oilve oil, vinegar, garlic and salt and pepper to taste.
  3. Drizzle dressing onto salad, especially the bread; toss until well coated. Let stand for a few minutes until bread has absorbed juices.
