Ingredients
- 5 medium ripe tomatoes, cored and cut into cubes
- 5 cups day old Italian bread, cut into 1 inch cubes
- 1/2 English cucumber, halved and sliced thin
- 1/2 red or Vidalia onion thinly sliced
- 1/2 cup fresh basil leaves lightly packed, chiffonade
- 2 tablespoons capers, rinsed
- 1/3 cup extra virgin olive oil
- 1/4 cup red wine vinegar or balsamic vinegar
- 1 clove garlic minced
- Salt and pepper to taste
Instructions
- In large serving bowl, combine tomato, bread, cucumber, onion, basil and capers.
- For the dresssing, in a small bowl, whisk together oilve oil, vinegar, garlic and salt and pepper to taste.
- Drizzle dressing onto salad, especially the bread; toss until well coated. Let stand for a few minutes until bread has absorbed juices.
